EVO Bistro offers us a new way to taste wine
No Comments »
For those of us who seem to have a constant craving for tasting (and purchasing) great nectar from the vines, there is fabulous unique place in McLean, VA proper. EVO Bistro, which opened its doors in recent months, offers patrons a fun and social way in which to satisfy their wine tasting habits and hobbies.

Found at 1313 Old Chain Bridge Road (the store front is visible from Dolly Madison), this little tapas and wine bar encourages us to “self-serve” from the spouts found along the wall. As a guest you can purchase a card, much like a credit card, which you slide into the slot above each collection of wines and you can get a taste, a half a glass or a glass of any of the wines featured. Me? Serve myself? you ask? Well, that is part of the real fun. EVO Bistro creatively creates an atmosphere were winos, both pro and joe, can mingle amongst each other and talk about the various tastings, likes, dislikes, comments, feedback, recommendations, etc. Think Napa Valley wine tasting (minus the vineyards, wineries, and fabulous countryside) meets DC suburbanites.

The concept is the brainchild of four experts in the restaurant and wine world: Sidney Sakho, Driss Zahidi, Jacques Rebibo and his son Michael Rebibo.
EVO Bistro is open for lunch and serves the wines and wonderful tapas bites, but the best time of course is in the evening. When you come, bring an open mind, your love for all types of wines, your curiosity to explore new tastes, and definitely be ready to meet some new people who share your adoration for the grape.
