The EVO Bistro Experience
Two girlfriends and I had the opportunity to get together, gab and enjoy some delicious tapas and vino at EVO Bistro the other evening. We are all about trying out new places, concepts and experiences, especially when it comes to food and wine.
Located right off of Dolly Madison (Rt 123) in the heart of McLean, EVO Bistro is very easy to get too. One doesn’t have to fight the congested arteries of Tysons Corner (unless you are already in it and are trying to get out) and the parking is plentiful. The space is intimate, cozy, and designed with warm colors and rich woods, which offer a great feel for autumn and winter (ugh. Did I just write winter? Isn’t it like 70 degrees outside?). Sidney Sakho, who in essence is EVO Bistro, took great care of us.
After asking what types of wines we liked and then delving deeper, he gave us each a half glass of what he thought we would enjoy. As a lover of reds, I tried the 2005 Stags Leap Petit Syrah, the 2005 Caymus Cab and the 2005 Palaciosles Terrasses. My girlfriends stayed on the white side and were sincerely pleased with their choices.
The idea of a self serving wine bar and being able to pick out our own wines was a fun experience. EVO Bistro intended this concept to bring a “social” atmosphere to what otherwise would be just a normal night after work. But, the wine tasting is just one part of what EVO has to offer. The menu is wonderful.
We tried a few tapas, but our favorites were the piquillos rellenos and the raviolis with butternut squash. The scallop was out of this world as well.
The guests who came into the “neighborhoody” type of destination seemed to be made up of some “regulars’ (which is easy to become, especially if you have points leftover on your wine card) as well as some newbies (like my friends). It was a nice social atmosphere where conversation was encouraged (you won’t find “SportsCenter” on in here – no TV!) and Sidney glided back and forth making sure his guests were happy and having a pleasant time- one felt like he was taking care of guests in his very own home, which made for an even better experience.
One note: You can also purchase cases of what you taste or what you have yet to taste. They have a huge selection from which to choose and great prices as well. Ask for Sidney and he will certainly accommodate your requests graciously and aid you in finding something you’ll certainly enjoy.

Sorry so late to post (have been in Fl. for a few days) but wanted to say thanks for the great tip on EVO…it was amazing, the in-laws loved it. The wait was 40+ minutes, but one of the staff, who helped us with our EVO Cards, who we later found out was Sidney, asked how we heard about his place so I mentioned The Punch and we were magically seated 5 minutes later. Great call on the ravilois…so good. Thanks again.
